Tofu Tomato Basil SoupServes 41-28oz. can whole plum together with juice Combine tomatoes with juice, tofu and sugar into a blender. Blend until mixture is creamy and smooth. Heat oil in a large saucepan over medium high heat. Sauté onion until tender, but not browned. Add garlic, stirring occasionally. Reduce heat to medium. Pour tomato-tofu mixture into pan, stir and heat throughout. Stir in basil and pepper. Cook for an additional minute. Adjust seasoning to taste. Add soy milk to thin if soup is too thick. |
