Roasted Garlic Tofu Party Spread
Makes 3/4 cup
1 large whole garlic bulb
1 tsp. olive oil
1/2 cup (6oz.) Soy Deli Firm Tofu
2 Tbsp, Soy cheese or Goat cheese
1 Tbsp. balsamic vinegar
1 Tbsp. parsley, chopped baguette slices
Preheat oven to 425'.
To roast garlic, remove paper-like skin leaving the cloves attached to each
other.
Trim the top of the bulb to expose the clove tops.
Place bulb on a piece of tin foil and drizzle with the olive oil.
Bake in oven for 30 minutes, until the garlic is soft to touch when squeezed.
Remove from the oven and cool.
Squeeze out the garlic flesh and put into a food processor with all the
remaining ingredients. Process until smooth.
Adjust seasoning to taste.
Refrigerate until cool. Spread over baguette slices.
