Tofu Spinach Lasagna

Serves 4

1/2 pkg. lasagna noodles
4 cups tomato or Italian sauce
2-8oz. pkgs. Soy Deli Nigari Firm Tofu, mashed or crumbled
1-10 oz. pkg. frozen chopped spinach, thawed or 1 lb. fresh
spinach washed and chopped
1 Tbsp. onion powder
1 tsp. salt
1 Tbsp. garlic powder
2 tsp. dried oregano
2 tsp. dried basa
Soy cheese, Mozzarella or Parmesan cheese

Preheat oven to 350'. Cook noodles in boiling water per package instructions, rinse and pat dry. Mix above ingredients Tofu through basil together. Coat a 2 qt baking dish with cooking oil and begin layering lasagna starting with tomato sauce, then a layer of noodles, next the tofu filling, then noodles, then
the remaining tomato sauce. Dish can be topped with grated Soy
cheese, Mozzarella or Parmesan cheese.

Bake for approximately 30 minutes or until bubbly.
