Tofu Potato Soup

Serves 4

4 cups of water
4 medium potatoes, peeled and cubed (4 cups)
1 medium onion, chopped 1/2 tsp. salt
1-8oz. pkg. Soy Deli Firm Tofu
1 Tbsp. olive oil
1/4 tsp. ground black pepper
1/2 cup Soyfreash Unsweetened Soy milk or regular milk

Boil potatoes, onions and salt until tender in 4 cups water. Blend in a food processor the tofu and olive oil until creamy. Remove cooked potatoes and onions from the water with a slotted spoon, reserve potato water. Add potato and onions to the tofu mixture, blend until creamy. Pour mixture into the reserved potato water. Stir in pepper. Adjust seasoning to taste. Add milk to thin if soup is too thick.
