| Tofu Potato SoupServes 44 cups of water Boil potatoes, onions and salt until tender in 4 cups water. Blend in a food processor the tofu and olive oil until creamy. Remove cooked potatoes and onions from the water with a slotted spoon, reserve potato water. Add potato and onions to the tofu mixture, blend until creamy. Pour mixture into the reserved potato water. Stir in pepper. Adjust seasoning to taste. Add milk to thin if soup is too thick. |
